Coconut Ice Cream With Mango

No beach vacation is complete without a refreshing coconut drink. It's affordable and so delicious, I'd buy more in a heartbeat! I hope I can find a similar one in my area.

I think about this dessert a lot. The ice cream had a great texture and coconut flavour and the juicy mango complemented it perfectly. The toasty rice on top added a nice crunch. Also love that it was served in a coconut bowl. Perfect to enjoy on the beach. Pic taken a year ago while backpacking around the Philippines 🇵🇭
