Blackbird takes making seitan to a level of artistry. The texture, mouthfeel, and taste is so close to real chicken it's astounding. The seitan on this sandwich is breaded and fried to crispy, golden perfection, smothered in fresh tomato sauce, and sprinkled with a very generous amount of vegan mozzarella - all on a fresh, local bun.
