Biang Biang Aubergine

I'm so in love with their biang biang aubergine noodles! First time I had them there was some soy mince as well, but now I rarely find it in the recipe. These ought to be some of the best hand pulled noodles I’ve ever had. I got the aubergine and minced vegan meat ones. Perfect amount of spice, an explosion of flavors with a very nice, spicy kick. They are quite greasy but that’s part of the greatness. You can also get the mild version if you don’t like spicy food. A little bit on the pricier side but honestly so worth it! #veganuary
