Eggplant rollatini

This was one of my favorite 🤩 dishes before I became vegan. I can’t

believe how well they nailed this vegan version. The cheese inside has the right balance of softness and flavor and their breading and sauce is simply Devine!
This is a must try!! So so good!🤩🤩🤩🤩🤩

I have tried several delicious dishes from Three Girls Vegan Creamery. It’s hard to pick

a favorite, but if I had to choose one, I would say this is it. The ricotta filling is creamy and perfect. Great marinara. So fantastic! We buy extra and freeze them for an easy lunch or dinner.
