Wok-Fried Eggplant, French Bean and Impossible Pork in Lao Gan Ma Sauce

This is such a standard dish with simple ingredients and is one of my favourites. Just so glad there's a vegan version now that tastes just as good and satisfying! Beautifully fried with pleasant wok hei!
