Vegan Philly Scramble

I enjoyed this so much! This is the veganized version of Rainbow’s Philly cheese breakfast dish, so this version has tofu and cashew cheese instead of eggs and dairy cheese. The tofu is in pieces, rather than broken up like a traditional tofu scramble, but I actually really enjoyed the texture of it. You can also opt for tempeh instead of tofu with this. Overall, super satisfying. I’m glad that Rainbow has recently expanded their vegan offerings!
