Vegan Carrot Cake

Super moist carrot cake with crunchy bits (I think it was chopped nuts / seeds or dessicated coconut)! Amazing texture given that this was gluten-free. Nicely spiced with cinnamon, ginger, and nutmeg. Loved the sweet and citrusy cashew white chocolate icing that the cake was smothered in. One of the best carrot cakes I've eaten, vegan or otherwise!
