This wonderful 🌱-based sushi bowl was made with nori seaweed, sticky quinoa, eel-free shiitake 🍄 “unagi”, fried white sweet potato, greens, cucumber, and tamari-sriracha aioli. It was full of pleasing contrasts of flavor and texture and is also available as a sushi burrito.
