Creamy Cauliflower Potato Soup with Thyme & Lemon Pepper Chickpeas

I loved this soup. It soup itself isn’t as heavy as it looks. There is no cream added just cauliflower and potatoes that make it rich and creamy! Most of the flavor was in chickpeas, but i would have loved it with or without them...a nice compliment, though.
