Such a shame this couldn’t be better!

For context Roberta’s is an old school NYC pizza

institution that’s been around from when your grandma ate pizza there. It’s awesome, super reliable and always great.

The Singapore branch is sadly not there yet. They use really poor quality flour and it shows. The ingredients were ok, and adding mushrooms, red onions and Calabrian peppers made this 12 inch pizza about $35 😳 but it would have been fine if the dough was good. If you can’t make great pizza dough you can’t make good pizza. I can go on and on about water ratios, fermentation and proofing but the bottom line here is the pizza needs a lot of work before it deserves the Roberta’s name.
