I've never had birria tacos before, so it's nice to now have the opportunity to have vegan ones! It was fun eating a messier food at a fine dining restaurant. The tacos are filled with lion's mane & wood ear mushrooms, gingered red onion, avocado crema, and Miyoko's mozzarella with crema fresco drizzled on top. It's served with roasted chili consommé. The consommé was probably my favorite part. It had a nice level of heat and a touch of smokiness. I also really liked how flavorful the avocado crema was. The only thing that threw me off was the wood ear mushrooms. They were very gooey and that isn't a very appetizing texture for me.
