Was excited to try this because the sashimi and egg looked so real!

Starting with

the good things about this dish: the vegan egg looked and had a similar texture to tamago, and the salmon looked very real. The sauce, avocado and wasabi helped to recreate the taste of eating sushi/sashimi.

The not so good: the quinoa really let this dish down. It was too soft and very bland, edible with the sauce but still found the texture lacking. If the quinoa could be lightly seasoned (eg lemon herb quinoa), it would’ve made a huge difference. The salmon didn’t have a similar taste and texture as real salmon, but when cut into small pieces, and mixed with the avocado and wasabi, it wasn’t too bad.
