Paella Vegano

A wonderful vegan #paella with tender mushrooms and beautiful herbs. I definitely recommend sharing this between two or three people, because it’s very flavorful and filling. Slightly oily for my taste but still delicious.

Bad pic but incredible dish! Made with rice, saffron red-pepper sofrito, chickpeas, peas, broccoli rabe, leeks, pumpkin artichokes, mushrooms, and vegan garlic aioli. So fresh and full of flavor. Would definitely order again.
