This was probably the dish I enjoyed the most at my dinner at Vegan Ramen Uzu in Kyoto. It was their interpretation of sushi, they served the rice flavored with yuzu and the seaweed separately, so you could build your own sushi piece. The rice filling was so flavorful and with such a unique zesty taste, it was nothing like anything I had before. You can really tell that in this restaurant they put a lot of work into each dish. It’s on the Michelin Guide but it doesn’t have any Michelin stars (yet) which probably makes it better because the prices are still affordable considering the quality. When you book online (it’s reservation only) you have to pay upfront the whole menu which is 7,700 ¥ for 2 appetizers, the ramen, the desserts and the beverages.
