Herbal Handmade Noodle

I think I have a new favourite dish here. It had strips of some kind of root vegetable that I didn’t recognise (yam?), spinach, chestnuts, mushroom, dates (that I had as “dessert” at the end), and I think a soy mock meat but not sure. The noodles were nice and chewy, and the soup was quite light, not overly salty. It’s not the most exciting dish but it’s good and healthy comfort food.
