Healthy Hericium Soup

If you love Chinese herbal soups then you’ll love this! 🍲🍲 I’m always so FOMO when I see double boiled soup but can’t have them because they’re meat-based. So this was soooo satisfying and it’s rich, umami and even a bit gelatinous even though vegan! It’s hericium (lion’s mane mushroom), wild yam, white fungus, another type of mushroom, and dates. Health-to-taste ratio is definitely on the high end of the spectrum 👍🏻

Hericium = monkey head mushroom. The soup is flavorful, with a generous serving of ingredients and surprisingly light. Chinese herbal taste is just right, without overpowering the other elements of the dish.
