There's a dry version and the one with the gravy. The dry one is one of the best to go with ice-cold beer. Having got the history lesson out of the way, this dish ticks off all the key elements. I prefer a spicier version than that was on offer.

The fried cauliflowers are so tender and savoury. I love the tanginess and sweetness of the sauce.
