Got this based on @mariaubergine’s rave review!! And was I disappointed? NOPE!!! Who knew stuffed veggies would be so delish? P.S - ignore the feta, I asked for it without the side of feta because I’m trying to consciously stop eating cheese but the universe was playing games with me. Thankfully, @arjundeorukhkar took one for the team and ate it so it wouldn’t go to waste.

Soft, warm, packed with flavour and tasted like lots of thought and love had gone into it. Love how the vegetable juices were flowing with one another. The aubergine and bell peppers were super soft. This dish reminds me how simple vegetable dishes can be, and that sometimes we don’t need fake meat to have a really satisfying #plantbased meal. Thanks Blue Kouzina! 🫑🍆

Wow! I love all the new vegan additions to the menu at Blu Kouzina in Dempsey Hill! The waiter was wearing a NYC hat 💪🏽 which made me feel right at home and said that of all the things on the menu the Gemista was the staff’s favorite. And it’s naturally vegan! Gemista is an oven roasted dish of bell peppers stuffed with marinated seasoned rice and served with veggies in a delicious tomato stew. It was amazing and so beautifully presented!
