Gazpacho

This delicious and refreshing chilled soup was made with tomatoes from Flamingo Ridge in Gaston, along with local organic cucumber, bell pepper, onion, and garlic. It was bursting with fresh summery flavors from all the veggies. I am a big fan of their tomato soup for chilly days and am more than delighted with this antidote to the hot weather. #saveveganrestaurants
