This empanada can be served hot or par-baked for you to heat up at home. Par-baked empanadas will last 5-7 days in the fridge. This one was filled with house-made seitan, corn, onion, and mango-BBQ sauce. Enjoyed with Ají Verde Salsa: green chile peppers, cilantro, tofu, lime, olive oil. It was delicious.
