Under the bed of kale is an assortment of grilled zucchini, capsicum, carrots, tomatoes, pumpkin,
potato, sweet potato and cauliflower. Went amazingly well with the two sauces - one was a tomato and olive based sauce and the other was a more fresh minty sauce. This dish is a testament to how amazing vegetables can be as they are. The whole table loved it and I highly recommend to anyone, vegan or not.
