I feel like I’ve been living under a rock because my hometown has a chain
of vegan sushi spots called Beyond Sushi! And it’s so good! My wife and I were looking for a spot after going to the MOMA and found this on the app.
The sushi was incredible. The filling in this bao was braised seitan, fennel, star anise, ginger, agave, smoked pepper sauce, sliced chili, crushed peanuts, and cilantro. Absolutely delicious. Just wish the bun was better, but I’m of course comparing it to where we live in Singapore where things like bao and dumpling wrappers are made to perfection. @olympiasplate loved the seitan!
