Avocado Smash

Perfectly toasted mutigrain bread with a generous helping of smashed avocado and just the right amount of pistachio & beetroots to give it a kick. I loved the incorporation of sprinkled feta and kale with a hint of lemon dressing too. I also added a poached egg to the top.
