The organizer of the event that I attended at this hotel informed the chef that I am vegan. I was served this amazing dish of thinly sliced portobello mushrooms with a quinoa stuffing, a side of sweet potatoes and black beans served over asparagus and yellow squash topped with a compote of apricots and golden raisins. This was so scrumptious that I almost licked the plate 😋
