Wow—this vegan caprese is something else. The homemade rice mozzarella is soft and creamy, pairing perfectly with the juicy heirloom tomatoes and fragrant basil. It’s light, fresh, and incredibly flavorful. I love that it’s gluten-free too! It really captures that simple elegance of Italian food done right.
