I was initially expecting a more typical soy and mushroom-based mock meat cutlet, but to my surprise this housemade cutlet was made with whole foods! 🍖 Light and crispy breadcrumbs on the outside, layered with juicy and succulent sliced king oyster mushroom, as well as a creamy taro filling. 🍄🍠 Served on a bed of fragrant, tasty, and spicy X.O.-inspired fried rice with corn and carrot bits. 🌶️🌽🥕 Even without Western liquor, this non-alcoholic rendition of X.O. fried rice earned the praise of my whole non-veg family!
