Risotto with black truffle and a few soybeans. The vegan version basically removed the mascarpone cream and croquette, without any other ingredients swapped in. The texture wasn't like what I would expect of risotto, and was more similar to Chinese porridge. There was also virtually no ingredients; would have appreciated vegan replacements such as a lentil croquette or roasted mushrooms.
