Does everyone else get excited when you see a new pasta shape at Trader Joe's? I've never seen trofie pasta before, and it's so different from the common shapes! I was worried because they looked a bit fragile, I wasn't sure they'd hold up to being mixed with sauce and veggies, but they are heartier than they look! I used it for my usual cilantro lime pasta salad, but they seem perfect for a pesto. I'd love to make a simple pesto dish with them next time!
Trofie is from Liguria in Northern Italy. The origin of the name isn't as straightforward as others like farfalle or radiatore, but the best guess is it comes from "strufuggiâ", which is Ligurian for "to rub". This would be in reference to how this pasta is made. Small pieces of dough are rubbed, or rolled, on a pastry board which results in the twists. Even looking at these you can tell it's a rustic shape, and the haziness of the etymology confirms its long history!

I live in the south of Piedmont, on the border with Liguria, and I know this type of pasta well. The typical ligurian dish, replicable in a veg version, is:
Trofie with basil pesto (no cheese, just basil, pine nuts blended with a little olive oil), and green beans + chopped potatoes previously boiled.

I made these yesterday with nutritional yeast and pine nuts pesto. Perfect. I blend nutritional yeast with almond flour, salt and black pepper for an extra cheesy and protein plant based Parmesan . The $0.7 for product review is truly silly. I post when I discover a great product, but income to donate to charity is not really incentivize how often I do 🤷🏻♂️
