Does everyone else get excited when you see a new pasta shape at Trader Joe's? I've never seen trofie pasta before, and it's so different from the common shapes! I was worried because they looked a bit fragile, I wasn't sure they'd hold up to being mixed with sauce and veggies, but they are heartier than they look! I used it for my usual cilantro lime pasta salad, but they seem perfect for a pesto. I'd love to make a simple pesto dish with them next time! Trofie is from Liguria in Northern Italy. The origin of the name isn't as straightforward as others like farfalle or radiatore, but the best guess is it comes from "strufuggiâ", which is Ligurian for "to rub". This would be in reference to how this pasta is made. Small pieces of dough are rubbed, or rolled, on a pastry board which results in the twists.
