Rich, but kept me wanting more. The pumpkin seed pesto, apple cider and ginger gave it zing and the coconut milk helped mellow and mesh the flavors together in a soothing way that keeps me thinking about all the aspects of the soup from the foraged mushrooms and greens to the earthy robust root veggies.
