I hate brussel sprouts. But I LOVE these. Definitely not the healthiest way to serve these veggies but probably the only way I’ll eat them.

Carrot Gnocchi

This gnocchi is made from carrots and has a vegan cream of mushroom kind of sauce. It’s got peas, pine nuts, more mushrooms and is garnished with fried sage. I love the fried sage. The pasta is a little chewier than potato based gnocchi but I enjoyed it. It’s different!
