This Roasted Beet Soup drizzled w/ Fennel Cashew Cream was exquisite! 💯 I was surprised how much I liked it since I don’t generally like beets. The texture was so creamy with small shreds of tender beet through out, and the flavors were comforting and hard to describe—very savory & unique! We loved the #acornsquash with yuzu #tofu rice stuffing and #cranberry compote.
