Chubby Bunny’s Croissan’wich never disappoints. 💯 I’m a big fan of 🥐 croissants 🥐 and always pounce on them whenever I find a vegan one in the wild.😛 This breakfast (or lunch) sandwich includes Sausage, Bacon, Egg, Cheese, Onion, Arugula, and Sriracha Mayo, all #vegan and delicious. I never realized how well arugula goes with egg until having this croissan’wich—the pepperiness that arugula provides is a perfect match with egg and a great way to incorporate greens! I believe Chubby Bunny uses Just Egg but am not positive, it definitely tastes like it. No longer in #seportland, you can now find Chubby Bunny food cart in #neportland in the Alberta Arts District. This consisted of a fresh, soft, and fluffy La Casa de Mama telera, 🐥-free 🥚 patty, melty 🐮🥛-free cheese, Chilango PDX tinga, which is tender, savory braised jackfruit and caramelized onions stewed in a spicy chipotle sauce, a crispy deep fried potato mitten (hash brown), pickled red onions, guacamole, and chipotle crema. This fantastic all-in-one burger/hot dog/breakfast sandwich consisted of a hotdog with herby 🌱-based breakfast sausage in the middle, fluffy 🐥-free 🥚, melty 🐮🥛-free cheese, smoky 🐷-free 🥓, and grilled red onions with burger sauce on a toasted sesame seed bun. This had a delicious and stunningly realistic sunny-side-up 🥚 that did not come from a 🐔! It was made by Yo! Egg from soy and chickpeas and had a crave-worthy runny yolk on top of a smooth, tender, and firm egg white, 3 grams of protein, no cholesterol, and no animal cruelty. Wow! In addition to the 🌱-based 🥚, this had savory, seasoned tofu feta, rich and creamy garlic hummus, pickled red peppers, perfectly ripe avocado, and bright and fresh microgreens on crisp and pleasantly chewy toasted sourdough bread. These pillowy, soft, and tender ravioli were filled with luscious, creamy, and authentic-tasting 🌱-based Kite Hill ricotta, topped with fresh basil, and served in a pomodoro sauce. So good! It’s been way too long since I've enjoyed such crave-worthy ravioli. This was a pop-up of Chubby Bunny’s New Yorker and Italian employee, Coleman, who convincingly demonstrated that all the deliciousness of traditional Italian pasta dishes can be achieved without involving any animals or their products. #veganravioli #saveveganrestaurants #pdxpopup #pdxvegan
