Vegan seitan parmigiana

This was my friend’s choice. They sent a nonvegan version before this. So be careful specifying that you want vegan since they have plates with same name in both menus.

Oh how I wanna love the food at this place! This dish, though perfectly acceptable, is lacking a bit in the texture of the seitan. It was a bit mushy and flavorless. The sauce was good, and the pasta was a perfect al dente. The cheese is daiya which isn’t the best but perfectly passable.
