Sweet Pumpkin Curry

So good! Tye pumpkin curry is so rich and delicious!

This consisted of chunks of kabocha pumpkin cooked in a curry made with fresh onions, spiced ginger, and garlic, served with steamed jasmine rice. This was very satisfying.
