Thai Peanut Quinoa Bowl

There are not many vegan options in Powell (where I work), but the locust table has a few dishes that can be made vegan! This was a nutritious dish and was very filling, but didn't feel like I was filling up on a lot of oils and junk. The fresh cucumber and pickled cabbage were my favorite touches!
