Purple Potato Beetroot Green Apple Salad

This was not at all what I expected when I ordered this "salad", but my friend and I were pleasantly surprised! Although it looks like mashed sweet potato, the beetroot and apple makes it lighter and gives it some additional flavor. It looks really eye-catching too. #abillionlove
