My #copycat repice for Vegan Sugar Free and Gluten Free #Snickers

Ingredients for the caramel:
* 125 g coconut cream
* 60 g rice syrup
* 1 handful of roasted peanuts (salted if preferred)
Ingredients for the base:
* 120 g finely ground oat flakes
* 20 g coconut oil
* 50 ml unsweetened soy milk
For the topping:
* Approximately 70 g extra dark 90% dark chocolate

Instructions:
1. Prepare the caramel: Pour the coconut cream and rice malt syrup into a small saucepan and bring to a boil, stirring continuously. Keep cooking over medium heat for a few minutes, stirring until the mixture reaches a caramel-like color. Remove from heat, let it cool, and add a handful of peanuts. You can leave them whole or chop them, as you prefer.
2. Prepare the base: Grind the oats into a fine powder using a food processor. Transfer them to a bowl, then add the melted coconut oil and soy milk. Briefly mix by hand until combined, then transfer the mixture into a rectangular mold. I used a washed milk carton cut vertically in half. Press the mixture into the container with your fingers, then smooth the surface with the back of a spoon.
3. Assemble: Pour the caramel and peanut mixture over the base. Transfer the mold to the freezer and let it set for at least 4 hours or overnight.
4. Shape the bars: After the resting time, carefully remove the bars from the mold. The caramel will be sticky but not fully solidified. Cut the mixture into bars about 1 cm wide.
5. Coat with chocolate: Melt the dark chocolate and coat each bar with it. Place the bars back in the freezer for at least 30 minutes to allow the chocolate to harden.
6. Storage: Keep the bars in the freezer and enjoy this delicious snack anytime!
