I’m a huge fan of roasted veggies of all kinds, so when we got a CSA box from Red Fire Farm last week, I was happy to discover a nice assortment of summer squashes!
I decided to roast them with some extra virgin olive oil, salt & pepper and pile them on some fluffy Focaccia. To add even more flavor and color, I tossed in some fragrant garlic, sweet roasted red peppers, and fresh rosemary, finishing it all off with a sprinkle of sea salt.
