This consisted of fluffy house-made tofu scramble over blue corn tostadas covered with bold and richly flavorful salsa ranchera. Served with arroz (warm Mexican rice) and frijoles (house-made refried beans). This had wonderful contrasts of flavor and texture. (Gluten-free)
