This panino instantly transported me to a little café in Italy 🇮🇹 The grilled eggplant, zucchini, and sundried tomatoes are packed with flavor, and the olive pâté adds a rich, savory touch that ties it all together beautifully. I added the tempeh and it gave the whole thing a protein boost and an extra layer of texture. So satisfying, so good, and 100% vegan!
