The majority of Americans can't stop whining about the high cost of eggs due to shortages caused by the bird flu pandemic. While that doesn't affect the vegan community, I feel this is the perfect opportunity to educate the non-vegans and vegetarians that chicken eggs are not a necessity., and there are plant based options!
This morning I made a diakon cake omelette with vegan diakon cake from Sassy Foods and Just Egg. For nostalgic reasons, I cook JustEgg occasionally. It tastes just like chicken eggs. You can't taste the difference especially if you sprinkle some black salt. It was the perfect brunch.
Cooking JustEgg is a little different from chicken eggs. It takes a little longer, so please be patient.
