This consisted of three small crispy rolled air fried tacos, filled with suadero (crispy, tender confit jackfruit and caramelized onions), topped with sunflower crema, almond queso fresco, and raw diced onion, and sunken in salsa verde or roja. We chose the fresh and lively salsa verde. Translating roughly into “drowned flutes,”, this veganized version of a popular Mexico City dish had fabulous contrast of flavor and texture. It is a special for Veganizer PDX’s World Vegan Month celebration and a portion of the proceeds will benefit The Humane League, an international nonprofit organization that works to end the abuse of animals raised for food through corporate, media, and community outreach.
