Ba Jiang Apigigi at Jade Rabbit at The Emerald Room — pdxveg's Review (Sep 23, 2024)

This was a collaboration with Norah for the Circle V Portland 2024 Vegan Food & Drink Festival.
It consisted of sticky rice with ginkgo nut, shiitake, dates, preserved radish, cassava, taro, chanterelles, garleeks, & 🌱-based pork. Wrapped in a banana leaf, steamed, & topped with fried shallot, 🌱-based 🐥 crumbs, & chili oil. It was a fabulous fusion of Thai and Pacific Islander flavors with PNW ingredients.
