I really like this ricotta, though it is pretty pricey (usually around $10), so I don’t buy it very often. I most often use it in lasagna or manicotti, but I got the ideal from the wonderful Rainbow Plant Life to put it on toast (here with pesto on top). It was good, but would be even better with better bread (like a ciabatta). I will try more toppings - I think cherry tomatoes would be good!
