Soup spoon’s latest seasonal vegan offering. Inspired by the Indonesian rica-rica spice rub which is usually used on chicken, this one comes minus the cruelty while still packing in a bunch of flavour. Has a nice kick of spice while still maintaining other complex flavours from the lemongrass and kaffir lime leaves, hearty mix of root vegetables and jackfruit without being heavy, and star toppings of fried shallots and coconut cream that were my personal favourite part!
