Review of Mafe/Peanut Stew with Millet Tempeh at AKADI PDX by pdxveg

This was a rich, thick, and creamy roasted peanut butter and aromatic AKâDI tomato stew with spices, veggies including pumpkin, carrots, and cabbage, and hearty and nourishing millet tempeh. So comforting and satisfying. Served with smooth, doughy, elastic, and fun corn fufu, a staple food in most of West Africa, of which we pinched off bits to scoop up all the delicious stew. (Gluten-free except for the fufu, which can be replaced by rice or eba, a fermented cassava dough).
