Yum, these are delicious. Don't expect your typical #cheesecake texture tho! A curious grayish purple cashew, chickpea, coconut mix with raspberry accents, atop a sweet crumbly golden base. From memory, I think this beats classic cheesecake anyway - this isn't not tart, is not overly sweet (in perception, at least!), and is more interesting in texture.
