This bowl can be made vegan by substituting the chicken for an Impossible burger patty, though the substitution costs extra. It comes with pico de gallo, black bean corn salsa, and guacamole over rice and lettuce, and is topped with chimichurri, tortilla strips, and a lime wedge. I thought the Impossible patty paired surprisingly well with the other ingredients, and it came cut into pieces so it was easy to eat. The Tex-Mex Shrimp Bowl is identical to this if you substitute the protein, so it doesn’t matter which one you order.
