I had no idea Betty Crocker made a carrot cake AND that it was #vegan! My mom bought it, after double checking online that it was vegan. Soooo kind!
Instead of eggs, we used baking powder and apple sauce. It kind worked? It tasted amazing, but the #cupcakes barely held together. They just fell apart. Oh well!
She got this at No Frills for less than $2.

Next time you can try a flax egg. That may help with the consistency! I am amazed that they use vegan sugar as I would have assumed they used Roger’s. So good to know! As I have to make EVERYTHING from scratch usually! 😂
